INTRODUCTION:
This recipe is near and dear to my heart. Made from a vegetable whose English name was something I was unaware of. We just called it gilka in Gujarati. The recipe is cooked in two ways. One is super simple and the other is a bit complicated. Just a few days ago, I found this vegetable in the market, and I was so happy. All those memories associated with this very vegetable started flowing in my mind. I picked it up immediately and decided to cook it on Sunday, which was 2 days after. I asked my mom how she cooked it, and she suggested 2 ways. I chose the complicated one, cause you know there is no reason though. 😅 Oh, and the vegetable was none other but- ZUCCHINI.

WHAT’S IT CALLED IN HINDI AND GUJARATI?
We often have different names for vegetables and fruits in other languages. The names that I know of zucchini are in Hindi and Gujarati. In Hindi, we call it TURAI. I never knew that the vegetable shaak I admired most would be called zucchini in English, unless I saw the exciting movie named *Ratatouille*. When my sister and I saw this movie with our mom, we insisted she cook it for us, and to our shock, she said we often cook many vegetables from this. We both asked her how it’s possible since we’ve never heard about zucchini. That’s when she told Oh, yes, because we call it GILKA.
IS IT SIMILAR TO THE DISH ‘RATATOUILLE’?
To be honest, in my opinion, I would say NO, because this recipe has Indian tadka and a few spices. It’s cooked in an Indian way, so I wouldn’t say it’s similar to ratatouille. It is a slurpy dish that can be eaten with warm rotis (highly recommended) or with rice. The sauce we will prepare for this recipe could be used for ratatouille, but again, it won’t be an authentic French dish then. To make the authentic ratatouille, you have to skip the tadka and spices. Anyway, for now, let’s just jump to the GILKA NO SHAAK for now. (zucchini with gravy)

INGREDIENTS:
- 2 tbsp Oil
- 1 tsp mustard
- 1 spring kaari patta
- 1 tbsp ginger garlic paste
- green chilli paste according to taste
- 1/2 kg zucchini
- 6 small tomatoes or 4 large tomatoes
- 1 big potato
- salt to taste
- 1 tbsp coriander powder
- 1/2 tbsp jeera powder
- 1/2 tsp amchur powder
